Is it possible to install an e-Mail server in our VPS? Or have any port closed?

Every port is openable, so there's nothing what can stop you to run an Email server. But make sure you configure it correctly, otherwise your VPS will be misused by Black Hats and suspended by Haphost.

I ask 'cos when I try to create it, I got the smtp service operative, but not the imap or pop3 :/

As you already replied to my sendmail tutotial, I assume you now know that IMAP/POP3 are not the email server and should be installed and configured aside from your MTA. If I manage some time the weekend, maybe I ll post a tutorial about configuring an MDA.
